Decisión acertada.

Tomás Esteban procede de una familia de viticultores de antiguo. Tuvo la habilidad, hace más de 25 años, de plantar su viñedo e injertarlo de viejas cepas de gran calidad y adaptadas a la zona. En contra de la moda en ese momento él escogió la conducción en vaso, en lugar de la de espaldera, porque la considera más adecuada para el clima de la Ribera del Duero. Actualmente, la plantación de Bodegas y viñedos Valderiz está compuesta por 60 hectáreas plantadas por Tomás Esteban y 10 hectáreas más, que supo conservar de su padre. Todas ellas distribuidas en más de 35 parcelas situadas en diferentes suelos, y orientaciones, en su pueblo, Roa. La familia es uno de los precursores de la agricultura ecológica dentro de la Ribera del Duero, la ausencia total de herbicidas, pesticidas y abonos minerales es su seña de identidad.Este tipo de cultivo ha hecho que hayamos podido conseguir una planta equilibrada y un suelo limpio de residuos que se ha traducido en un fruto excepcional. Desde el año 2000 una pequeña superficie de terreno es cultivada con prácticas biodinámicas.

Instalaciones.

Las instalaciones de Bodegas y Viñedos Valderiz han sido diseñadas buscando la simplicidad en el proceso de elaboración del vino, con el fin de evitar en todo lo posible el sufrimiento de la uva antes de su transformación. Las elaboraciones son tranquilas con largas maceraciones en frío, a la uva no se la exige nada, dejamos que ella nos ofrezca sus virtudes. La fermentación es un proceso espontáneo provocaba por levaduras autóctonas. Con total ausencia de adición de cualquier tipo de producto enológico (acidificantes, taninos, glucosa, encimas etc.). Cada detalle es importantísimo, desde la limpieza de cada utensilio utilizado hasta los rigurosos controles que se realizan a la uva desde 3 semanas antes de la vendimia hasta que la botella es servida al cliente. El envejecimiento se realiza en una selección de los mejores toneleros franceses utilizándose el 80% de roble francés y el 20 % de roble americano. Se realiza un seguimiento del comportamiento de cada tonelero, y cada tipo de tostado en cada tipode suelo. Para así buscar la máxima expresión de cada tipo de suelo.

Viñedos.

La bodega tiene 60 hectáreas de viñedo plantadas por Tomás Esteban y 10 hectáreas que supo conservar plantadas por su padre, compuestas por más de 35 parcelas plantadas en vaso y situadas en diferentes suelos. Valderiz es defensora de la agricultura ecológica. La ausencia de herbicidas, pesticidas y abonos es su seña de identidad, lo que está llevando a pensar más allá y empezar a hacer viticultura biodinámica. La climatología de la zona se caracteriza por una pluviometría moderada-baja, que unida a sus veranos secos e inviernos largos y rigurosos y con importantes oscilaciones térmicas, la enmarcan dentro de un clima mediterráneo, con más de 2.400 horas de sol, cuyo carácter primordial es la continentalidad.

Bodega
Las elaboraciones de Valderiz son tranquilas, con largas maceraciones en frío, dejando que la uva ofrezca todas sus virtudes. Se utilizan levaduras autóctonas con total ausencia de adición de ningún tipo de producto enológico. Todas las labores de bodega van encaminadas a la perfecta elaboración y crianza del vino. Las grandes inversiones son las barricas de primer nivel, se trabaja con más de 5 de los mejores toneleros franceses y la maquinaria adecuada para el perfecto mantenimiento de la uva. Cada detalle está cuidado al máximo, desde la limpieza de cada utensilio hasta los rigurosos controles que se realizan a la uva desde 3 semanas antes de comenzar la vendimia hasta que la botella es servida al cliente.
