La bodega.

Casar de Burbia es una pequeña bodega familiar que elabora solo vinos tintos a partir de viñedo propio. Casar de Burbia posee viñedos en Valtuille de Arriba en su mayoría viñedos antiguos que en el caso de la viña de sapita fue plantada a principios de siglo por D. José Bouza Potes. En sus 27 has de viñedo que son atravesadas de manera sucesiva por el Camino de Santiago la variedad reina es sin duda la Mencia, variedad que según cuenta la leyenda tiene origen en el Cabernet Franc. Un peregrino francés trajo la uva al Bierzo, ésta fue evolucionando con el tiempo para ser hoy lo que se conoce como Mencia y que en pequeñas trazas se encuentra mezclada con la variedad Garnacha Tintorera. Posiblemente en las viñas aledañas a el camino de Santiago esta la mencía más antigua del Bierzo. Cuando la familia Fernández Bello empezó a adquirir viñedos viejos en el año 1989 los viñedos en La montaña de Valtuille de Arriba sufrían un lento y patente abandono, por la escasa producción en la Montaña frente al fértil valle. La Calidad en aquella época no era el factor más valorado. Sin embargo la mayor calidad de estos viñedos es hoy en día incuestionable, tanto por sus grandes pendientes orientadas al sol y que drena cualquier posible acumulación de agua en exceso, como por su altitud superior a los 700 mts que permite una gran amplitud térmica entre la noche y el día. El terreno donde se cultivan los viñedos de Casar de Burbia es factor clave en nuestros vinos, su gran cantidad de molibdeno tiene su origen en la pizarra, que junto con el hierro que tiñe los suelos de rojo, hace de estos vinos una autentica explosión mineral. Siendo estos vinos muy característicos.

Los viñedos.

Los viñedos antiguos necesitaban ser regenerados en varios aspectos. Por una parte más del 30 % de ellos estaban plantados de cepas de vino blanco, en su mayoría palomino y de escasa calidad enológica en la zona, para ello se empezó un trabajo que duraría más de 7 años en el que la bodega empezó a injertar más de 8.000 plantas de palomino excesivamente productivo en la zona y de escasa calidad mantuvo los pies antiguos de estas cepas y cambio las variedades blancas por la variedad reina de la zona Mencía con las técnicas de injerto más tradicionales de la zona, el injerto de meseta. La estructura del viñedo no admite otra opción posible que la de la vendimia manual que ha podido ser mejorada por la bodega con la utilización de pequeñas y ventiladas cajas de 10 kg que son llevadas a la bodega siempre en tiempos inferiores a 3 horas. El valor añadido de los viñedos antiguos y la calidad de la uva en la montaña, no dejo opción enológica a la bodega más que la de la calidad. La concentración tánica de la uva solo admitía la elaboración de vinos con un mínimo de Crianza. Surgió pues, la especialización de Casar de Burbia en la elaboración de vinos siempre con un mínimo de Crianza y de vinos tintos fruto de un trabajo de regeneración de viñedos sin igual en el Bierzo. Las distintas crianzas en barrica 6, 9 y 15 meses, los diferentes robles ensamblados, y un exhausto trabajo de selección de pagos mas de 42 separados en tres niveles de calidad A,B,C son los tres fuentes de la complejidad de los vinos de Casar de Burbia. El trabajo de regeneración del viñedo más antiguo sin igual en el Bierzo y la dirección técnica, 100 % familiar, manteniendo la tradición vitícola, hace de Casar de Burbia "el Bierzo en esencia". Todos los viñedos que tiene en propiedad Casar de Burbia se posicionan en el entorno de la montaña de Valtuille de Arriba, junto al Camino de Santiago. Contamos con 26 hectáreas de viña de montaña, que trabajamos siempre manualmente en función de la edafología del terreno. Las viñas se han reconvertido a ecológico, y los tratamientos en éstas se han reducido al máximo en los últimos años.
