Legado.
Nacido de la unión de trabajadores agrícolas y con una larga trayectoria y experiencia en la elaboración de vinos y cavas, Covides se destaca por su potencial productivo y calidad. El legado de las anteriores generaciones de nuestros viticultores nos ha dado nuestra seña de identidad. Desde Gelida hasta El Vendrell, a lo largo de todo el Penedés, más de 2.300 hectáreas de viñedos repartidos por más de 50 municipios forman el viñedo propio de COVIDES Viñedos-Bodegas. Un extraordinario abánico de terrenos que, dentro de la Denominación de Origen Penedés y Cava, permiten elaborar vinos y cavas de una calidad y variedad excelentes.
Historia.
Covides Viñedos-Bodegas es la primera Cooperativa vinícola de primer grado catalana en términos de volumen. Su cosecha anual alcanza los 24 millones de kg de uvas. Covides nació en el año 1963 del esfuerzo de más de seiscientos agricultores que buscaban elaborar de manera conjunta el vino de sus cosechas. Para ello comenzaron a utilizar los primeros tractores y otras máquinas y dejaron en desuso la elaboración casera y el medio de tracción animal. Se levantaron las bodegas de Sant Cugat Sesgarrigues y la de Sant Sadurní d'Anoia que tuvieron las instalaciones más modernas del momento. Desde el principio se buscó elaborar vinos con carácter propio y alejarse de la producción a granel. Para la década de los ‘80 se iniciaba la venta de vino embotellado y la producción de cava. Desde los años ‘90 se han ido adaptando los sistemas de plantación para hacer posible la vendimia mecanizada. En el año 2005 se ampliaron las instalaciones y se levantó una cava con capacidad de albergar 7,5 millones de botellas.
Instalaciones.
COVIDES Viñedos - Bodegas dispone de unas instalaciones donde capacidad y tecnología se adaptan perfectamente a la producción que generan sus tierras. Unas instalaciones que, sin olvidar la tradición, han sido reconocidas con premios de prestigio internacional por su modernidad y eficiencia.
Elaboración y vendimia.
Los vinos y cavas que elabora Covides son el resultado de aplicar técnicas modernas de elaboración dentro de las instalaciones más innovadoras. El uso de prensas hidráulicas para la extracción del mosto, los depósitos de acero inoxidable para la fermentación y otros avances tecnológicos resultan en vinos y cavas de gran carácter y calidad. La vendimia transcurre desde finales de agosto hasta mediados octubre, según la maduración de las uvas. Una vez seleccionadas las mejores uvas, se llevan con celeridad a nuestras bodegas para que conserven sus mejores características organolépticas. Sólo utilizamos el mosto que procede de la primera fracción del prensado, “el mosto flor”, para la elaboración de nuestros vinos y cavas. Para elaborar nuestros vinos blancos y cavas utilizamos variedades autóctonas como el Macabeo, el Xarel·lo y la Parellada, y también variedades internacionales como el Chardonnay. Merece mención especial nuestro cava rosado elaborado únicamente con uvas tintas de la variedad Trepat. Elaboramos nuestros vinos tintos con las variedades Cabernet Sauvignon, Merlot, Tempranillo, y Monastrell.
