Domaine Lafage
Los viñedos.
Durante más de una década hemos trabajado con Jean-Marc Lafage en su finca en el Rosellón, y en la frontera con España, donde consulta sobre varios proyectos. Tan buenos como sus vinos, cuando lo conocimos, solo mejoran con cada cosecha. Cuando conocimos a Calatayud por primera vez, sugirió que visitáramos su finca en el Rosellón y el resto, como dicen, es historia. Jean-Marc y Eliane Lafage cultivan 160 hectáreas de viñedos ubicados justo al sur de la capital de la Cataluña francesa, Perpignan. Algunos de sus viñedos están situados a pocos kilómetros del Mediterráneo, mientras que otros se encuentran en las estribaciones de los Pirineos. Esta gama de sitios les permite hacer tanto blancos refrescantes como tintos concentrados y, siendo este el Rosellón, algunos vinos fortificados también. Beneficiándose de un clima cálido y seco, la finca se cultiva orgánicamente. Cultivan principalmente Garnacha (Blanc, Gris & Noir), Syrah, Mourvedre, Carignan, Marsanne, Roussanne y Chardonnay con una proporción significativa de viñedos con más de 50 años de edad. El suelo, a medida que se acerca a la costa está erosionado, grava aluvial, mientras que en los sitios de mayor elevación es predominantemente esquisto.Se cosechan a mano y la elaboración del vino es sorprendentemente sencilla con acero inoxidable para los blancos más frescos, pero en su mayoría tanques de concreto para el resto con una pequeña cantidad de demi-muids de roble francés.
Vinos al otro lado de los Pirineos.
Entre el mar y la montaña, Lafage reúne tres terruños muy concretos: L'Agly (terreno de marga negra, que confiere opulencia y autenticidad a las uvas de muscat, garnacha y cariñena), Perpignan (tramontana y mar, suelos calcáreos en zona aluvial, ideal para los blancos de garnacha blanca y gris, y para sus rosados) y Les Aspres (suelos marbro-esquistosos, rodeados de garriga, el último viñedo plantado en terrazas al pie de los Pirineos). Vendimian las uvas a mano, mimando al máximo el viñedo y respetando la naturaleza en cada detalle. En bodega, otorgan la mayor parte del protagonismo a la fruta, trabajando con materiales como el acero inoxidable o el cemento y reservando la madera, a menudo de gran volumen, para los vinos de gama alta que pueden integrarla sin que su aromática esencial se vea distorsionada. En sus vinos encontramos, a menudo, un perfil o características que nos recuerdan a los vinos elaborados al otro lado de los Pirineos, especialmente a los de la DO Empordà o incluso a los del Priorat, a pesar de estar más alejados. Al igual que sucede con los vinos de estos vecinos catalanes, los vinos de Domaine Lafage han sido siempre reconocidos por ofrecer una enorme relación precio-placer que ha seducido ya a muchos consumidores y que mantiene fascinada a buena parte de la crítica internacional.
