El emigrante inglés.
"Ennoblecer" es el término empleado por los especialistas para la tradicional acción de injertar la cepa con las distintas variedades de uva. Esta acción que, en el siglo XIX, salvó a la vid de los estragos de la filoxera fue el origen de la actual riqueza de los viñedos del Penedés. El término adquiere especial significado en Cavas Hill. Sus orígenes se remontan al siglo XVIII cuando un emigrante inglés, Joseph Hill, inicia la explotación de las viñas de la finca "El Maset". Dedicados al cultivo de la vid desde el siglo XVII, Cavas Hill se fundó en 1887 manteniendo intacta hasta hoy la voluntad de mantener vivas la producción artesanal y las tradiciones de nuestra comarca, el Penedès. El amor por la tierra, el espíritu de superación y la tradición han sido y continúan siendo los pilares de nuestra bodega. Cavas Hill es el legado del espíritu emprendedor de un británico -Joseph Hill- que en el año 1761 se instaló en los viñedos del Maset, en Moja, entre Barcelona y Tarragona, para dedicarse a cultivar la viña y elaborar vino. Durante generaciones sus descendientes continuaron el trabajo familiar. Su hijo Joan heredó el negocio del padre; construyó la masía donde actualmente se ubica la empresa y la bodega que quedaba separada de la casa por una puerta donde aún se conserva el dintel grabado con el año de fundación de la bodega: Año 1887.
Largas crianzas en una cava histórica.
A finales del siglo XIX, coincidiendo con la llegada de la revolución industrial, la expansión del conocimiento y la llamada Belle Époque en Europa,
y el Modernismo en Cataluña, el espíritu optimista y emprendedor de la sociedad del momento se contagió también en la bodega. En el año 1918 la familia Hill encarga la reforma modernista de la fachada principal al arquitecto Antoni Pons. Unos años más tarde, en 1924, se empiezan a construir las históricas cavas, formadas por cinco galerías excavadas en una roca blanda, llamada “tapassot” que es maleable y resistente y permitió dar forma a paredes y arcadas de manera natural, convirtiéndola en una de las cavas más singulares del Penedés. En el año 1926 comienzan a reposar las primeras botellas de cava, elaboradas siguiendo el método champenoise pero con variedades autóctonas de la zona, macabeo, xarel·lo y parellada.
