La finca.

MontRubí se encuentra situada a 60 kilómetros al oeste de la ciudad de Barcelona en una zona vitivinícola de tradición centenaria. La bodega y los viñedos de MontRubí están situados entre los 400 y los 800 metros sobre nivel del mar, en la sierra prelitoral de Cataluña. Las cepas se internan en bosques profundos de pino mediterráneo y conviven en un entorno salvaje con sotobosques aromáticos, donde habitan especies animales como el jabalí, la liebre y el águila perdicera. El nombre MontRubí fue creado en 1984, y hace alusión a una propiedad agrícola ubicada en L'Avellà, en la cual se refundó su bodega, un edificio de 1880 que hasta principios del siglo XX elaboró vinos y aceites que se exportaban a Cuba. El vocablo Mont identifica su entorno natural y la viticultura de montaña y el vocablo Rubí sitúa su ubicación en el término municipal de Font-Rubí. La finca L'Avellà se encuentra donde parece que el camino se termina, entre las poblaciones de Guardiola de Font-Rubí y Font-Rubí, en el Alt Penedès.

Viticultura sostenible.

En MontRubí apostamos por la viticultura tradicional realizada desde antaño: una viticultura sostenible y respetuosa con el medio. Al mismo tiempo, nuestra vocación innovadora nos ha llevado a incorporar las más modernas tecnologías. Siguiendo esta línea, trabajamos en cultivos con tratamientos alternativos, llegando a producir uva sin ningún tipo de residuo, ni siquiera de los autorizados en el cultivo ecológico. Producciones muy controladas, con cubiertas espontáneas naturales y regeneraciones de suelo con cultivo de microorganismos procedentes de los bosques de la zona. En definitiva, buscamos el equilibrio de las cepas con su entorno, con suelos cada vez más vivos y siguiendo directrices basadas en la biodinámica. Siguiendo la línea marcada en el viñedo, continuamos en bodega utilizando sulfitos en cantidades mínimas, criando los vinos con sus finas lías, que actúan como antioxidante natural. Todos los procesos son manuales, desde la vendimia hasta la recepción y selección de la uva en bodega, así como también el pigeage, batonage, descubado y prensado. Utilizamos diferentes materiales para la crianza de los vinos como depósitos de cemento en forma de huevo, tinajas de cerámica hechas a mano con carbonato cálcico de la zona y barricas de roble francés de distintos tostados.

El proyecto Gaintus.

El proyecto Gaintus emprendido por MontRubí en el año 2000 se identifica con nuestra voluntad de recuperación de la variedad Sumoll, una uva históricamente autóctona en la zona. Este trabajo nos dió el reconocimiento como la primera bodega del mundo en producir vinos 100% sumoll y seguimos siendo los mayores productores de Sumoll, exportando y dando a conocer esta magnifica uva en más de 15 países alrededor del mundo. El nombre Gaintus hace referencia a la señalización de una ruta de escalada en Los Pirineos y simboliza el desafío al que se enfrentaba MontRubí. Antiguamente la Sumoll estaba muy extendida en Cataluña y especialmente en el Penedés, sin embargo, el hecho de que fuera una variedad delicada y difícil de cultivar, junto a la plaga de la filoxera de la vid (finales del siglo XIX y principios del XX), y la replantación con variedades de uva blanca para la elaboración de los vinos espumosos, hicieron que fuera desplazada por otras variedades foráneas, quedando prácticamente extinguida.

Primer monovarietal de Sumoll mundial.
En el año 2001, MontRubí realizó una decidida apuesta por recuperar esta variedad, con su vino tinto Gaintus, el primer monovarietal de Sumoll tinto del mundo. A partir de allí, se elaboró Gaintus cada año y en los últimos años han nacido otros vinos 100% Sumoll, como Gaintus Radical o Gaintus One night's Rosé, por lo que el pionero Gaintus fue rebautizado como Gaintus Vertical.
