La bodega.

Esta firma es un brillante ejemplo de la renovación varietal del Penedès. Fue fundada en 1984, pero sus orígenes se remontan siglos atrás. La finca data del siglo XI, como lo atestigua la capilla románica que en ella existe. A mediados del siglo XIX, Pablo Parellada de Naveran construyó una base sólida y, durante todas sus generaciones, la casa Naveran ha guardado su carácter artesanal y familiar. En sus viñedos, de más de 100 hectáreas, se cultivan variedades nobles, como chardonnay, cabernet sauvignon, tempranillo o merlot. Naveran es el apellido de una familia dedicada al cultivo de los viñedos y a la producción artesanal de sus propios vinos y cavas. Sus bodegas están situadas en la finca de Can Parellada (Torrelavit), en el centro del Alt Penedès. El hecho de ser vitivinicultores, es decir, de cultivar las vides y de elaborar los vinos, controlando en todo momento el crecimiento y la calidad de la uva y realizando coupages innovadores a partir de sus propias variedades, distingue a estas bodegas de la mayoría de las existentes en la zona. En el ejercicio 2010, la facturación de Cavas Naveran fue de 1,5 millones de euros, de los que la mitad corresponde a la exportación. Sus principales mercados, además de España, se hallan en Bélgica, Estados Unidos, Dinamarca, Japón, Suiza, Portugal, Alemania, Chequia, Malta, Inglaterra e Irlanda. La Denominación de Origen Penedès es el primer destino enoturístico de España, con cerca de medio millón de visitantes en el 2009.

Historia y filosofía.

A mediados de siglo XIX, don Pablo Parellada emigró a Argentina en busca de fortuna y, ya de vuelta a España, se casó con la hija del Marqués de Naveran, señor de Guernika, y compró la finca en la que se asentaría la familia. Al término de la filoxera, don Pablo replantó la finca con vides de la variedad Montonec – hoy conocida como Parellada, en recuerdo de su nombre - que, con el tiempo, vendría a resultar primordial en la elaboración del cava. A su muerte, legó la propiedad a su hijo mayor, Pablo Parellada de Naveran, quien la transmitió a su hija Antonia, casada con el suizo René Gillieron, quien, en 1975 y junto a su hijo Michel, decidió reactivar significativamente la producción de sus viñedos. Así, Cavas Naveran fue fundada en 1984 por su actual Consejero Delegado, Michel Gillieron Parellada de Naveran, licenciado en Enología por la École d'Ingénieurs de Changins (Suiza). Decidido a impulsar un proyecto enraizado en la tierra de sus antepasados, ha querido conservar el carácter artesanal y familiar que siempre tuvieron sus bodegas. Fieles a la filosofía artesanal de sus antepasados, se cuida el crecimiento y la calidad de la vid con una atención personalizada de los racimos, que garantiza un perfecto grado de maduración. Y en la búsqueda permanente de la máxima calidad, se efectúa también una apuesta por la innovación. Fruto de este equilibrio entre tradición e innovación, Cavas Naveran ha obtenido numerosos reconocimientos, como la reciente distinción de que ha sido objeto su "Perles Roses" como el mejor Cava Rosado de España 2010, según Robert Parker de "Wine Advocate".

Los viñedos
En los viñedos Naveran se cultiva las uvas blancas del Penedés, tales como el Macábeu, Xarel.lo, y la Parellada; también las uvas Viognier, Chardonnay y las uvas tintas Cabernet Sauvignon, Pinot Noir, Syrah, Tempranillo y Merlot. La singularidad que presenta la orografía de la finca, que se caracteriza por sus desniveles naturales y en la que predominan las laderas en ligera pendiente, favorece el cultivo de la uva que recibe la influencia benefactora del sol la mayor parte del día. Can Parellada, es una de las mayores propiedades del Alt Penedès, con 110 hectáreas. Cuenta con una masía familiar y diversas edificaciones, en las que se alojan bodegas, naves subterráneas para crianza, y almacenes de producto. Las bodegas disponen de capacidad para un millón de litros, en depósitos de acero inoxidable y 500 barricas de roble francés del Limousin. Su producción anual es de 500.000 botellas (50% cava, 50% vino).
