En 1820, James Burroughs crea Beefeater, la única ginebra que se elabora en el corazón de Londres inspirada en los guardias reales que custodian la Torre de Londres llamados Beefeater´s. La receta de Beefeater Gin es única y secreta, solo se transmite del maestro destilador a su sucesor. La primera destilería de Beefeater estaba ubicada a orillas del río Támesis. En 1958 la producción se trasladó a una destilería más grande y moderna en Kennington. La ginebra Beefeater desde que salió al mercado en Londres y hasta el día de hoy, continúa siendo producida en esa ciudad. Actualmente la empresa se encuentra bajo el mando de Pernod Ricard y sus productos son número uno en España y número tres en EEUU.
Historia.
En el año 1820 abrió sus puertas Chelsea, una destilería en Cale Street que operaba bajo la administración de la familia Taylor. Esta destilería sería la primera sede de lo que hoy es Beefeater Gin. Quince años más tarde nacía en Devon James Burrough, el fundador de Beefeater, quien luego se convertiría en farmacéutico continuando su carrera en Toronto, Canadá. Al regresar a Londres en el año 1863 Burrough adquirió la destilería Chelsea y comenzó a producir licores, ponches y ginebras frutales contando entre sus clientes a la exclusiva tienda Fortnum & Mason. En el año 1908 la producción de Beefeater se trasladó a Hutton Road en Lambeth y se llamó Cale Street a la nueva planta para mantener la herencia. Ya en Lambeth se aumentó en gran medida la producción gracias a la adquisición de uno de los equipos de destilado más avanzados del momento. Finalmente, en 1958, la destilería encontró su actual centro de producción en Kennington y para 1963 ya comercializaba tres de cada cuatro de las botellas de gin que se exportaban a EEUU. Ese mismo año fue la única ginebra que zarpó con rumbo a Nueva York en el viaje de bautismo del Queen Elizabeth II. Luego de casi un siglo la empresa dejó de pertenecer a la familia Burrough en 1987 al ser adquirida por Whitbread. En el año 2005 volvería a cambiar de manos para pertenecer a Pernod Ricard quien pondría en marcha un programa de reinvensión de la marca lanzando para el año 2008 el Beefeater 24.
Elaboración.
La ginebra Beefeater se elabora en base a alcohol neutro de grano en el que se maceran ingredientes vegetales, enebro, limón, cáscara de naranja amarga, almendras, semillas de Angélica y regaliz, durante 24 horas. Terminado este paso, la mezcla se destila por siete horas y se conserva únicamente el corazón de la misma. La producción de toda la semana se mezcla bajo la supervisión del maestro destilador garantizando un producto uniforme y consistente. A continuación se añade agua ablandada para rebajar la graduación alcohólica: a 40% para el Reino Unido y 47% para el resto del mundo, y se embotella.

Beefeater ha tenido un buen desempeño en los concursos internacionales de licores, consiguiendo un doble oro, un oro, una plata y dos bronces en el San Francisco World Spirits Competition entre el 2006 y el 2010. Ha recibido además un puntaje de 93 en la reseña del Beverage Testing Institute, clasificándolo como “excepcional”. La ginebra super-premium Beefeater 24 a su vez ha sido galardonada por el San Francisco World Spirits Competition con una medalla de bronce en 2009 y un doble oro en el 2010.
