Una larga tradición vitivinícola, con una saga familiar que se remonta al 1312, conduce a Josep Mestres Manobens a elaborar en 1925 la primera botella de vino blanco, con una segunda fermentación, después de un largo periodo de crianza en la cava. El vino espumosos se presentó las Navidades de 1928 con el nombre Cava Mestres. Desde este momento, la familia a seguido elaborando los cavas de la Heretat Mestres siguiendo el método tradicional, y aun hoy todos los procesos de elaboración, removidos, degüelles y demás cuidados se realizan de un modo manual, botella a botella, tomándose todo el tiempo necesario. Mestres fueron precursores en el uso de la palabra Cava: desde 1928, los cavas Mestres del Penedès etiquetan así sus elaboraciones, tanto por la calidad de sus vinos base como por realizar las segundas fermentaciones con tapones de corcho. Dos características marcan los cavas de la bodega Mestres: por un lado, elaboran sus cavas sin tener la necesidad de añadir licor de expedición después del degüelle. Por otro lado, la crianza en barrica de los vinos base, una forma distinta de elaboración con la que los cavas con crianza Mestres marcaron toda una innovación en el mundo del cava.
Generación tras generación.
Desde 1312 hasta la actualidad, 28 generaciones han formado parte del mundo vitivinícola del Penedès, desde el centro de Sant Sadurní d'Anoia, donde la bodega tiene aún su sede en un edificio de interés histórico-cultural.La filosofía de Mestres, 100% ecológica, se basa en una atención pormenorizada de todos y cada uno de los procesos que forman parte del camino hacia la elaboración de un cava. Mestres es propietaria de 20 Ha de viñedo, donde se cultivan tanto cepas en espaldera como en vaso, las más viejas se plantaron en 1955, en ellas se ha intentado mantener la tipicidad de la zona cultivando las variedades autóctonas, el Macabeu, Xarel·lo y Parellada; y Monastrell y Trepat en el caso de su cava rosado. Los procesos de removido y degüelle, al igual que el resto de sus cuidados, se hace de forma manual, con cuidado y tenacidad, botella a botella. Mestres puede congratularse de haberse sido la primera bodega en presentar un cava sin adición de azúcar después del degorgé, Brut Nature Josep Mestres.
