En 1792, Jean-Rémy Moët asumió la dirección de la bodega fundada por su abuelo en 1743. Construyó su nueva mansión en Épernay, en las afueras de La Folie, hoy Avenue de Champagne, cerca del lugar donde se encuentran las bodegas y almacenes de la empresa familiar, y desarrolló su actividad comercial. En 1833, la empresa Moët se convirtió en Moët et Chandon tras la entrada del yerno de Jean-Rémy Moët, Pierre-Gabriel Chandon, asociado a la gestión de la casa de Victor Moët de Romont.
