Español [ ES ]Cérvoles Celler nace en el año 1997. Después de una intensa búsqueda de fincas y microclimas idóneos para la implantación de nuevos viñedos dentro de la Denominación de Origen Costers del Segre, la familia Cusiné, al analizar las posibilidades y descubrir las grandes características de las viñas y los vinos de La Pobla de Cérvoles, adquiere la actual propiedad de Cérvoles Celler. Cérvoles Celler se encuenta en la vertiente norte del Montsant y dominado por la Sierra de la Llena, se encuentra La Pobla de Cérvoles, municipio integrado administrativamente en la comarca de Les Garrigues y en la Denominación de Origen Costers del Segre. Se trata de una comarca de compleja orografía en la que se suceden gran cantidad de cerros y vaguadas en dirección norte, la cual se va empinando hacia el sur para terminar en la Sierra de La Llena. Ésta marca la frontera entre Lleida y Tarragona, a la vez que separa la comarca del Priorat y de La Conca de Barberà.
Cérvoles Celler es una finca de 102 hectáreas, con 32 hectáreas de viñedos de las variedades cabernet sauvignon, tempranillo, merlot, garnacha, chardonnay y macabeo, plantadas principalmente entre los años 1960 y 1989, distribuidas en 10 diferentes parcelas. Éstas poseen diferentes vertientes e insolación que otea sobre toda el área, gozando de una climatología muy suave a pesar de la dureza de la zona. Situadas entre 700 y 750 m. de altitud disponen de una media de 450 mm. de lluvias anuales, cantidad adecuada para la viticultura de calidad. La textura de los suelos es franca (franca-limosa, franca-arcillosa) con diferentes niveles de gravas. La permeabilidad de estas gravas subterráneas permite un buen drenaje, así como las arcillas proporcionan humedad considerable, formando en conjunto un buen equilibrio hídrico. Después de la fundación de la empresa Cérvoles Celler, se inicia una amplia reconducción del viñedo con el objetivo de incrementar la superficie foliar por kilo de uva a la vez que se mejora la metodología de vinificación para conseguir la mejor calidad de los vinos. La gran personalidad que transfiere el microclima a los vinos de Cérvoles Celler y la gran calidad de los mismos, fue la principal razón para decidir aportar los medios y los conocimientos necesarios para transformar una empresa y unas viñas en una marca de alta calidad en el mercado internacional. En cuanto a la bodega, esta ha sido diseñada a medida, considerando el tamaño y la producción de las diferentes parcelas, de modo que en cada depósito se fermenta la uva de una variedad y parcela determinada. Actualmente el parque de barricas de compone de 300 unidades, principalmente nuevas, y todas ellas de roble francés.
Fruto de las características de los viñedos y de la zona en la que se asientan, gozamos de altos grados de alcohol, extracto, color, y como más importante, una pronunciada y común personalidad en todas las variedades cultivadas. Estas virtudes nos permiten jugar entre límites para ir descubriendo, año tras año, todo el potencial de calidad del que disponen nuestras uvas. Actualmente los vinos de Cérvoles forman parte del selecto grupo Grandes Pagos de España, asociación de fincas vitivinícolas de toda España que defienden y propagan la cultura del Vino de Pago, producido en un terruño específico y que refleja la personalidad inconfundible de su suelo, su subsuelo y su clima. Cérvoles Celler pertenece desde sus inicios a la reconocida asociación Grandes Pagos de España, y actualmente sus viñedos ocupan unas 55 hectáreas que se distribuyen en 12 parcelas, con cepas principalmente de Garnacha, Tempranillo, Syrah, Cabernet sauvignon, Merlot, Macabeo y Chardonnay, todas a una altitud de 700-750 metros de altitud y cultivadas mediante una viticultura exigente y sostenible. Un concepto ancestral del vino de calidad, pero sólo recientemente renacido. En el año 1997 nació este proyecto concebido para producir vinos de finca de gran calidad que fueran una clara expresión del territorio en el que se cultiva, convirtiéndose en el primer proyecto de viticultura de montaña que se concibió en Cataluña.
