Español [ ES ]Hermanos Sastre es una de las bodegas más sobresalientes del país. Una firma familiar que recoge la herencia de los primeros viticultores de la Ribera del Duero. Sus orígenes se remontan tres generaciones atrás, cuando Severiano Sastre apostó por los viñedos de lo que hoy es una de las zonas más nobles de la D.O. Ribera del Duero: La Horra (Burgos). Ribera del Duero para ir creando un excepcional patrimonio vitícola, y en 1957 participó en la creación de la Cooperativa Virgen de la Asunción. Su sueño de crear una bodega propia lo haría realidad su hijo Rafael. Así, en 1992 nace Bodegas Hermanos Sastre, que ya empezaba a contar con el apoyo de los hijos de Rafael, Pedro y Jesús. Actualmente, Hermanos Sastre, más conocida como Viña Sastre, se erige como una bodega modélica en el panorama internacional, creando vinos situados entre los mejores del país, como Pesus, Regina Vides o Pago de Santa Cruz. Su viñedo, cerca de 50 hectáreas, cuenta con una edad media de medio siglo; y en las viñas aledañas a la bodega, al estilo de los ‘châteaux' bordeleses, practican un cultivo ecológico y biodinámico, en línea con una filosofía de máximo respeto al ‘terroir'. Nuestra filosofía es elaborar una producción limitada con ilimitados cuidados. Por eso somos respetuosos con la tierra, manteniendo un cultivo tradicional, sin adición de abonos minerales, herbicidas o insecticidas. Una forma de hacer las cosas que determina la personalidad y calidad de nuestros vinos.
Un gran terruño es mucho más complejo de lo que uno se imagina. No es únicamente el sol, la tierra, su capacidad natural de drenar, de retener la humedad (caliza, arcilla), su porcentaje en distintos elementos que harán que los suelos sean cálidos o fríos, ricos o pobres, equilibrados o insuficientes. Es también su exposición en una colina, en una meseta o en una hondonada, que hace que estos pequeños lugares sean sitios excepcionales. En bodegas Viña Sastre el viñedo se sitúa, en La Horra a una altitud de 800 a 840 metros sobre el nivel del mar en pequeñas colinas dirigidas hacia las cuencas de los ríos Duero y Gromejón, que concentra las temperaturas cálidas del verano y aumenta la madurez y el suelo es drenado naturalmente por la cuesta. Todas estas particularidades contribuyen AL ESTILO DEL VINO VIÑA SASTRE. Resueltamente rico, denso, graso, debido a la precocidad de su terruño, pero también elegante, distinguido, puro y con mucha frescura gracias a la Tinto Fino y a la composición perfectamente equilibrada (caliza / arena) de sus suelos.
Los métodos de elaboración en esta bodega son muy sencillos: SE DISEÑAN LOS VINOS DESDE SUS VIÑEDOS. Después de un cultivo natural, sin la adicción de abonos minerales, herbicidas e insecticidas, se vendimia cada tipo de vino por separado y se lleva a su depósito correspondiente, donde se deja fermentar con sus propias levaduras autóctonas, controlando la temperatura por medio de depósitos con camisas refrigerantes. Cuando la vinificación esta concluida se estabilizan por medio de frío, pero no por medio de máquinas, si no de forma natural; sencillamente se sacan a unos depósitos en el exterior, donde las temperaturas de diciembre y enero en la Horra alcanzan hasta los 15º bajo cero. De esta manera, los vinos se quedan limpios de una manera natural y sin ningún método físico o químico agresivo que altere su calidad. Después se realiza la crianza en las naves de barricas, hasta que llega la hora del embotellado.
La esencia de Viña Sastre está compuesta por un gran equipo de profesionales, que trabajan día a día tanto en el campo como en la bodega, para conseguir un producto excepcional y mejorar añada tras añada.
